The Chatty Crock-Pot was on Hiatus!

Forgive me that The Chatty Crock-Pot has been empty for several weeks.

If you have been keeping up with The Chatty Momma, you know that we have a "Chef in Training" in the family, Isabella, and I have been assisting her as she creates delicious snacks and meals on her new show for kids called, "It's Snack Time!"

I hope that you have or will check it out.

Now that we have that under way and Isabella has gotten into the swing of preparing delicious treats, The Chatty Crock-Pot is back and it is on FIRE!

Up next: a delicious Roast with Veggies

Lemon Herb Roasted Chicken

(photo coming soon)

Today, for the first time I am making Lemon Herb Roasted Chicken. I'm a little nervous about washing the inside of the chicken during preparation. I actually planned on marinating the chicken all night, but couldn't get over that part.

LOL, the princess in me. (I'm learning)

Well, here is the recipe for you to get started...if you're ready for deliciousness!

Ingredients
3 to 4 pounds roasting chicken
1/4 cup onion, chopped
2 tablespoons butter
juice of one lemon
1/2 teaspoon salt
1 tablespoon fresh parsley
1/4 teaspoon thyme
1/4 teaspoon paprika

Directions
1. Place the onion in the cavity of the chicken and rub the skin with butter.
2. Place chicken in slow cooker.
3. Squeeze lemon juice over chicken and sprinkle with remaining seasonings.
4. Cover; cook on Low 8-10 hours or High 4-5 hours.
